This is the first salad that I’m officially obsessed with and can’t stop making. I could eat this for breakfast, lunch and dinner (and I probably have, actually). Think of this salad as a gateway drug to healthy eating – it’s delicious, fresh, healthy, filling and full of flavor and healthy fats. It can edge on the unhealthy side if you put a lot of dressing and load it up with tortilla toppings, but I think if you’re not a huge salad eater, this is a perfect place to start. Go easy on the dressing and tortilla chips to keep this salad in the healthy bracket.
RECIPE
Ingredients:
- Can of corn
- Can of black beans
- Avocado
- Romaine Lettuce
- 1/4 cup red onion, diced
- Southwest or Chipotle dressing
- Tortilla strips
- Cherry Tomatoes
Directions:
Wash and chop your lettuce. (We use about one head of romaine per person.) Toss with your desired amount of dressing. Combine corn and black beans in a bowl with 1/4 of a red onion. Spoon desired amount on top of tossed lettuce (you’ll have extra for your next meal!). Slice about half an avocado on top and sprinkle with tortilla strips. Eat up!

It’s a chipotle dressing You don’t need a lot though, because the avocado really does some heavy lifting. It’s not as noticeable in the picture since it was already tossed!
